Scrumptious Summer Snack
YOLO TX Bites is back with another delicious creation, courtesy of our chef-in-training A.C.! This time, A.C. is whipping up “Corn In A Cup” a.k.a. a quick and easy version of authentic Mexican elote.
Here’s the recipe we used:
Step 1: Husk four ears of sweet corn.
Step 2: Boil corn five minutes until yellow.
Step 3: Cut the corn off the cob.
Step 4: Mix four tablespoons mayonnaise or Mexican sour cream.
Step 5: Mix four tablespoons unsalted butter, softened.
Step 6: Pinch of salt, stir.
Step 7: Divide cups, sprinkle six tablespoons of crumbled queso fresco or mild feta cheese, chili powder, and lime over the top.
*Singing and dancing is optional, but encouraged!
